Sundried Tomato Bruschetta
IngredientsBase:
1 baguette French Bread or Similar Italian Bread
Derlea Sundried Tomato & Herb Spread
Topping:
6 or 7 Ripe Plum Tomatoes (about 1 1/2 lbs)
1 tsp of Derlea Minced Garlic
6 fresh Basil Leaves, Chopped
2 Tablespoons Olive Oil
Salt and Freshly Ground Black Pepper to Taste
Cheese, Feta, Goat Cheese or Mozzarella (Optional)
Cooking Directions1. Preheat oven to 450°F.
2. While the oven is heating, chop up the tomatoes finely. Put tomatoes, garlic, olive oil, basil in a bowl and mix.
3. Slice Baguette in ½ inch slices, and spread with Derlea Sundried Tomato & Herb Spread.
4. Place bread on cooking sheet, and place in the oven when it has reached 450°F. Toast for 4-5 minutes or until the bread begins to become a little crisp.
5. Spoon on the tomato mixture, and you may top with a small amount of cheese. Feta, goats cheese and mozzarella all work well.
6. Place in oven for 2-3 minutes to allow the cheese to melt then serve. |
