Spicy Ginger Chickpeas
Ingredients3 Tbsp. Organic Canola oil
1 large organic onion, finely diced
1 bay leaf
1 1/2 tsp Derlea Organic Minced Garlic
2 Tbsp. grated fresh ginger
2 tsp. coriander, ground
2 tsp. cumin, ground
1/2 tsp. cardamom, ground
Sea salt and freshly milled pepper
2 tomatoes, peeled and diced
1 1/2 cups chickpea broth or water
3 cups cooked organic chickpeas
Juice of 1/2 organic lemon
For garnishes: small dishes of chopped cilantro and diced tomato
Cooking DirectionsHeat the oil in a large skillet over medium heat. Add the Derlea Onion and cook, stirring frequently, until well browned, 12 to 15 minutes. Lower the heat and add the bay leaf, Derlea Garlic, Derlea Ginger, spices, 1/2 teaspoon each salt and pepper and the tomatoes. Cook for 5 minutes then add the chickpea broth and chickpeas. Simmer until the liquid is reduced to a sauce-like consistency. Taste for salt and season with lemon juice. Serve with the garnishes or scatter them over the chickpeas.
