Pineapple Papaya Salsa


Ingredients

2 cups finely diced fresh, organic pineapple
1 cup finely diced fresh papaya
1/2 cup diced red pepper
1/2 cup diced organic onion
1/2 tsp Derlea Organic Minced Garlic
1 small jalapeņo pepper, seeded and minced (wear rubber gloves)
2 Tbsp. shredded mint leaves

Cooking Directions

In a bowl combine all ingredients with salt to taste and let stand at room temperature for 1 hour. Salsa may be made 1 day ahead and chilled and covered.

Makes about 3 cups.

Great on fish, meat or tofu.
